Why use this page part and not the other store display page parts?

This page part is useful if you are wanting to provide category navigation on your page for your site's visitors.  This is different from the store front page part which would be used for the initial landing page of your store to feature products on.  This is also different from the store product display page part which would be used to highlight one or more products only on your site's page.

Why can I not add categories to my store once I've added this page part to my page?

You will add store items (categories, products, settings, etc) within the main 'Store' tab of the system.  This page part simply allows you to insert different store views for your visitors.
